Chophouse Blue Crab & Avocado CocktailFrom: Vail Chophouse

Ingredients:

  • Crab cocktail
  • Juice of 3 Limes
  • 2 Ripe Avocados – diced
  • 1 lb. Lump Blue Crab Meat
  • 1 Medium Sized Tomato – diced
  • 2 Medium Sized Shallots – minced
  • 1 tbsp. Coarsely Chopped Cilantro
  • ¾ c. Mayonnaise
  • 2 c. Shredded Romaine Lettuce

Garnish

  • ½ c. Diced Tomato
  • Sprigs of Cilantro
  • 1 Lime Cut into Wheels or Wedges

Preparation: Chill out six martini glasses in the fridge as you drain the crab meat, checking for rogue unwanted pieces. In a lil mixing bowl, toss the diced avocado with some lime juice. In a medium bowl, combine your crab, diced tomato (reserve some for garnish), minced shallots, cilantro and mayo. Add in your lil bowl mix of limed avocado and get them all combined, being careful not to break up the crab meat. Line the bottoms of the chilled glasses with 2-3 tablespoons of shredded or thinly sliced Romaine and add in the crab cocktail mixture. Finally garnish with diced tomato, a sprig of cilantro and a lime wheel or wedge. Serve this fresh and tasty delight to gasps of pleasure from your guests.

Avocado Pancake with Dungeness CrabFrom: Sapphire Restaurant and Oyster Bar

Part 1 Ingredients:

  • 2 avocados
  • 2 whisked eggs
  • 1/2 cup milk
  • 2 tbs melted butter
  • 1 oz Dungeness Crab

Part 2 Ingredients:

  • 1 cup flour
  • 3/4 tsp baking powder
  • 1 tsp sugar
  • salt and pepper to taste

Preparation: Beat all the part one ingredients together like a royal rumble cage match. Throw in all the part two ingredients and continue to mix. Cook the pancake over medium heat in a pan and when it’s ready, garnish with fresh salsa and sour cream. Receive compliments to the chef.
